Recipes
that Are Truly ....'The Cat's Meow'
These recipes
came from an old cookbook of my Grandma's. The cover is missing,
so I don't know the title...but it was printed as a fund-raiser
for the Fort Wayne, Indiana Homebound Meals Program. These are good,
easy treats, great for gifts, quick refreshments at the next get-together,
or a rainy afternoon (and simple enough to let older children "help"
make them.)
Candy Cookies
(No Bakes)
2 c. sugar
1 stick butter*
1/2 c. milk
3 c. quick oats
1/2 c. peanut butter
1/2 t. vanilla
5 T. cocoa
Mix together sugar, butter, and milk in saucepan, boil 1 minute.
Add remaining ingredients. Drop from spoon onto waxed paper. *
Use real butter if you don't want to refrigerate these! Oleo (margarine)
will make soft cookies that need to be kept in the refrigerator.
Turtles
12
oz. bag pecan halves
1 can condensed milk
1 c. light brown sugar
1 stick margarine
pinch salt
1/2 cap vanilla
3/4 c. light Karo syrup (corn syrup)
12 oz. bag semi-sweet chololate chips
Arrange
3 pecan halves in triangle shape, separating by about 2", on 3
or 4 buttered cookie sheets. Combine milk,sugar, margarine, syrup,
and salt, in heavy saucepan. Cook, stirring constantly, to soft
ball stage (Liquid, dropped from a spoon into a cup of cold water
forms soft ball). Add vanilla, stir well. Using large spoon, put
about 2T. caramel on each group of nuts. Let set until cool.
Melt chips
in microwave. Start with 2 min. at MED, stir. Continue heating
and stirring in 30 sec. increments until chips are completely
melted. "Frost" caramels. You may have to reheat the chocolate;
it sets up quickly. People
love these! I have several friends who call and beg me to make
Turtles for them at Christmas.

bag of semi-sweet chocolate chips (Ghiradelli Double Chocolate
is the best supermarket brand)
2 Tbs. Butter
1 Tbs (more or less) cream or milk
Optional: 1 Tbs (more or less) rum or liqueur
Put the whole
mess in the top of a double boiler, or a smallish metal bowl that
sits above (not touching … important!) an inch or two of
boiling water. Stir from time to time until it all melts together.
Should be glossy and rich when ready to eat. Don't
worry if the sauce seems too thick; just add a little more liquor
or milk and stir! (Since we are kitchen Luddites, we cannot offer
up microwave instructions on this recipe... however, it seems
entirely possible. Please use your own judgement accordingly.)
(I've done
something similar in the microwave. Start the heating process
on MED for 2 min., stir. Reheat in 30 sec. increments, stirring
thouroughly in between cycles, until completely melted. You can
also substitute almond, mint, orange, or raspberry flavoring for
